Apple Fritters

This version adds bits of apple to the fritters for a sweet fruity treat.

Yields6 Servings
 2 cups flour
 3 tbsp sugar
 21/4 tsp baking powder
 2 tsp cinnamon
 2 eggs
¾ cup plain soy milk or rice milk
 2 tsp vanilla extract
 2 tbsp oil
2 whole Granny Smith apples, peeled and diced
 confectioners' sugar
 canola oil, for frying
1

In a mixing bowl, combine flour, sugar, baking powder, and cinnamon.

2

In a separate bowl, beat the eggs with a fork; add soy or rice milk, oil, and vanilla.

3

Gently fold dry and wet ingredients together until just combined (do not over-mix.) Fold in apples. Add apples and stir together to make a very chunky batter.

4

Heat 3 cups of canola oil over medium heat to 350 degrees F. Alternately, test oil by dropping a little drop of batter into the oil. If it sizzles immediately and rises to the top, the oil is ready; if it burns quickly, turn down the heat.

5

Using a small ice cream or cookie scoop, drop batter into the hot oil, six or eight at a time. Sometimes they'll flip over by themselves; sometimes you have to flip them. Cook fritters about 2 to 2 1/2 Minutes, but watch to be sure they do not get too brown.

6

Remove and drain on a paper towel. Dust very generously with powdered sugar and serve warm.
